Some vegetables are better grown from bulbs or tubers.
Garlic Purple
Garlic Australian Purple (Allium sativum) is a hardneck variety that has a sweeter flavour and is easier to grow than other varieties. Australian Purple will grow well in warmer climates and matures early in the season.
For best results when planting, separate the cloves of Garlic and plant each one individually to produce an abundant crop of fresh full flavoured Garlic. Bulbs can be used raw or cooked, and green stems can be occasionally snipped during the growing season and used in place of Garlic Chives.
In warmer climates plant early Autumn for a September harvest, for cooler climates plant Autumn/Winter for a late Spring harvest. Harvest when most of the foliage has turned brown. Gently dig up bulbs and allow plants to dry out in a cool airy place. Once dry store in a dry airy position and check regularly for signs of spoilage.
French Echalion
French Echalions (Allium cepa var. aggregatum) are larger variety of shallot that are much more user friendly than the normal variety as they are larger and much easier to peel than the traditional shallot.
Also known as Banana Shallots, French Echalions have a mild subtle flavour and are ideal for braising and roasting and can be used everywhere onions or shallots are used.
Harvest in summer before flowering and as the tip begins to dry. A single bulb will multiply to produce 6-12 bulbs. Prefers a full sun position in well drained soil.
Shallots - Red
Red Shallots (Allium cepa var. aggregatum) are a smaller type of onion with a red pink colour. Their mild subtle onion flavour compliments rather than overwhelms a dish. Shallots are great for making your own pickled onions and a range of sauces and can be used in place of normal onions for a milder taste.
Harvest when tops begin to fall over. Dry after digging, clean and separate bulbs leaving some larger bulbs for planting in the winter. Store in a cool, dry environment. A single bulb will multiply to produce 6 - 12 bulbs.
